Nasi Lemak



A 3 part-er. The rice (nasi lemak), the chicken (ayam goreng), and the chili condiment (sambal bilis).

Ingredients for the rice (nasi lemak):

  • Half a cup of rice
  • Quarter cup of coconut milk
  • Inch of ginger
  • 2 cloves of garlic
  • 2 pieces of shallot
  • 2 blades of pandan leaf
  • 1 teaspoon of lemongrass paste
  • A pinch of salt


  1. Slice ginger, garlic and shallot into small pieces, cut the pandan leaves into small manageable pieces.
  2. On a small pot, fry those 4 ingredients above till it’s fragrant
  3. Then pour in bit of water, coconut milk, pinch of salt, and lemongrass, cook till the mixture starts to boil
  4. Add in the rice, and just proceed like cooking rice normally


Ingredients for the chili condiment (sambal bills):

  • Dried anchovies
  • Raw peanuts
  • 5 pieces of chili pepper
  • 1 teaspoon of tamarind paste
  • 2 pieces of shallots
  • 2 cloves of garlic
  • 1 teaspoon of shrimp paste (belacan)


  1. Uh, blend the chili, shallots, and garlic together with small amount of water
  2. Fry the anchovies and peanuts, until the anchovies become crispy
  3. Dump in the rest of the ingredients, and cook till it’s fragrant, and set it aside


Ingredients for fried chicken (ayam goreng):

  • Chicken, cut into small pieces
  • 4 cloves of garlic
  • 2 pieces of shallots
  • 1 inch of ginger
  • 1 teaspoon of lemongrass paste
  • 1 tablespoon of coriander powder
  • 1 tablespoon of curry powder
  • 1 tablespoon of cayenne pepper
  • 1 egg
  • Some curry leaves
  • Enough flour


  1. Uh, blend the garlic, shallots, and ginger together. Blend them without any extra liquid
  2. Mix everything together, and leave it for 30 minutes or so
  3. Fry.

Serve the whole thing on banana leaf, with sliced cucumber and boiled egg.
